用料:
腩排或肉排300克斩件,马铃薯300克,小洋葱1个切件,蒜蓉1茶匙。
调味:
盐半茶匙,糖21/2茶匙,茄汁2汤匙,喼汁2茶匙,生抽半汤匙,水13/4杯。
芡:
生粉1茶匙,水2汤匙。
做法:
1、马铃薯去皮洗净,切角形用清水浸半小时,取起沥干水。
2、排骨洗净抹干水,加老抽1茶匙拌匀。
3、把锅烧热,下油2汤匙搪匀,入下马铃薯爆一对微黄色,盛起。
4、洋葱、蒜蓉、排骨放入锅内爆至微黄色,灒酒半汤匙,下调味煮滚,慢炆为15分钟。下马铃薯用筷子搅匀,再约炆15分钟至排骨及薯仔腍,埋芡上碟。
STEWED SPARE RIBS WITH TOMATO SAUCE
Ingredients:
2/3 1b spare ribs, chop into pieces; 2/3 1b potatoes; 1 small
onion, cut into pieces; 1 tsp minced garlic
Seasoning:
1/2 tsp salt; 2 1/2 tsp sugar; 2 tbsp tomato sauce; 1 tsp Worchestershire
sauce; 1/2 tbsp light soy sauce; 1 3/4 cups water
Thickening:
1 tsp salt; 2 1/2 tsp sugar; 2 tbsp water.
Method:
1.Peel and wash potatoes. Cut into wedges and soak in water for
half an hour. Drain well.
2.Wash and wipe spare ribs. Mix with 1 tsp of dark soy sauce.
3.Heat up 2 tbsp of oil in saucepan, tilt to coat with oil thoroughly.
Saute potatoes until slightly golden. Dish.
4.Put onion, garlic and spare ribs in saucepan and sauté until
slightly golden. Then sizzle 1/2 tbsp of wine. Add seasoning and
brin to boil. Then simmer over low heat for 15 minutes .Add in
potatoes. Stir well with chopsticks. Stew for further 15 minutes
until spare ribs and potatoes are tender. Pour in thickening.
Dish up.
